New Clutch, Different feel

So I bought my 530i secondhand, and learned how to drive manual off of it. Apparently it was already half dead since with this new one installed the car is heaps faster now!
Anyway, I find that when engaging the clutch from a stop to first gear or reverse, the acceleration likes to really jump. The problem is, I can't back out of my narrow driveway, letting the clutch out completely and reversing so fast. And sometimes, according to the situation I need to keep slow. I find myself either constantly engaging and disengaging immediately or just engaging really really slowly (similar to riding the clutch) to keep the acceleration down. I feel like I'm missing some knowledge or technique and wearing the clutch out. How do I handle the clutch so that the car starts up slower at a more controllable speed?

Hi,
I had similar problem on my 2005 545i. Finally I discovered that the clutch cylinder was bad. Part is not that expensive, but I would estimate 2-3 hours of labor to replace it.
