I noticed 2-3 times in 4 months (and so, not so frequently) that if I shut off the car and I start it when it is already hot it tends to hiccup like it can't mantain rpms. shutting off the car and restarting, nothing strange. no errors or so. ideas on what may need a check?

What model e60 do you have? A lot can change from different engine types (turbo, NA, etc).
Coil packs attach to the spark plug and are a modern invention in todays engines. They increase the voltage from the battery and store that charge so its always available to that individual plug..This is supposed to increase performance, timing etc.
You may also want to run some techron fuel treatment through your fuel as well to see if your injectors are a little dirty. I run it once an oil change.
Good luck

Being a M54 removes a lot of the issues the turbo N54s have so you are looking at plugs, packs and/or injects. Until the car throws a code (check engine) you really won't know for sure. That should tell you which cylinder is problematic. I would run the techron first and see if that helps. Good luck.
