Had a 60 mile road trip from home to West Palm Beach this morning. I reset all my mileage readings as soon as I jumped on the highway. Averaged 75-80 mph the entire trip with a couple bursts up to 110 mph when I had plenty of open road. My average MPG was 24.7 and made it up to 25.2 once. My car is an 06 550i with several mods. Just seemed a little high and I was expecting 21-23 at most.

I don't think that your recently observed highway mileage is odd. I tracked total gasoline consumption, over 100K+ miles of driving, for my '01 740i and it was 21.something mpg. About 60% highway / 40% round town. I thought that was pretty good for a big car driven conservatively most of the time.
Last week I took a 600+ mile trip in my 530xi - lots of it highway driving and about 100 mi in local stop and go traffic (lowered fuel econ and average speed) and tracked 29+mpg.

that seems normal if your tires pressure are correct and average 80mph+ with very little braking.
