If you looking to run Window application , you can run VPC on MAC-mini. With this , you can practically run any WINDOWS applications on Mac-mini.
Check with LMK, he has the VPC with GPS software running.

I use mini-itx board but with the case it's too big for the glove compartment. So I had to find another place for it. So far working wonderfully.
And all the control is via my K750i handphone, including the keyboard. I use the keyboard just to key in names for the GPS; so good enough for me.

i'm concerned about hibernate and startup time. how long isit on windows to wake up/resume the system after startting the engine? did you get a special power supply for this setup?
