I've been getting a misfire code and narrowed it down to a clogged cat.. new cats for this car run for nearly $800 a piece. Is there any reason I should stay away from just welding on a Chevy 4.8L cat?

yes really. BMW uses some really good quality high flow cats. You'd be loosing power. get some used BMW units.
