Given the offset difference (12mm vs either 18 or 20mm), will the 12mm offset 166's or 167's M-wheels work on a non-M E60 when you use a 245/35/19 tire (vs the 255/40/19 tire used on the M's), and will there be any issues?

245/35/19 will work without any problems whatsoever in either 166 or 167 wheels. IMO, the 18mm offset of the 172 wheels puts the wheels to far inset.

Thanks for the reply. I'm don't understand why the M wheels would work on the front with 245/35/19 tires. If the smaller offset (12mm) moves the wheel and tire outward, and the recommended tire for a non-M wheel with an 18 or 20mm offset is 245/35/19, wouldn't the same size tire rub when mounted on an M-wheel with a 12mm offset? I must be overlooking something.

You need to understand the differance between wheel offsets and tyre diameters.
The 166 and 167 -rims bring out the front WHEEL out some 6mm's / side - that ain't that much.
But the non-M E60's needs the correct TYRE diameter, which is a 245/35 19".
The same goes for the rear tyres.
285/30 19" rears look great and are within the factory given non-M E60 tyre specs.
The M wheels are good for the tyres sizes above.
I strongly recommend that you buy tyres with rim protection!
