I just got my tires mounted today, and there is a gap between the tire and wheels. Does this look correct?
Im running 275.30.19 Falken 451, with Avant Garde m310 19.9.1/2 and 36psi in the rear.

Nice wheels BTW. Yes, what you have is correct as far as gap wise with 275 if you would of went 295 it would have less of an gap.

Because most members have lowered there car's really low with aftermarket springs. If you dont want to rub with fenders when your car is lower then sport suspension then use 275. If your on stock suspension using 295 should be good especially with more tire to wrap around the lip of the rim to protect it a bit more.

Yeah it is unnatural that your wheels are so clean.

Hopefully you have ceramics to keep it that way.
