Ok.. got over 700 miles on the 550 - revved up to 4500 RPM but not over. 100mph... but not over.
Do I really need to wait to 1200 miles to throw it in DS and floor it?

No go ahead and floor it once or twice just to try it... then wait to 1200 miles... With 700 miles ish I wouldnt keep beating on it just yet.

Go ahead and drive as hard as you want.
When I picked up my car at the European Delivery center in Munich, the staff encouraged me to go as fast as I wanted on the Autobahn. Their advice was, every time after I exceed 100mph, decelerate slowly and vary the rpms as my speed comes down. Do that and the engine will be fine.
That is what BMW in Munich told me. I believe them.
When I got back, my dealer agreed too.

Just be sure to wait for oil to be warmed up fully before flooring it - about ten miles travel.

You can do it once in a while and not at constant speed. Remember most of cars on the lot are revved very high during test drive and heavily loaded (at least two persons in the car).
