More than likley a leak. Just because you cannot see it, doesn't mean there is not a leak. I had the same issue a few months back. A lot of the coolant would evaporate or be cleared away frm driving. Check the under belly pan to see if there is any proof of a leak. Mine tuned out to be the coolant reservoir and the collant tubing above the radiator. These will eventually fail. Could also be a pinhole in any of the rubber hoses. I never found a pronounced leak as it always seemed to dry off when the car was parked. Did you check the water pump? How many miles on your 530xi?

If you are still smelling it, remove the front underbody shield. That will collect small leaks and you might never see them on the ground. My garage is epoxy painted, so leaks are very easy to spot and determine color, etc. You can put down newspaper under the car and find the drip.

Just a friendly reminder to consider using a washer fluid other than blue if you use OEM coolant; they look awfully similar on the floor of your garage
