I thought the dealer mentioned to me that while locking the car with the remote if a window was down....there was a way to roll it up / Looked in the books and didn't see anything...can this be done?

Not in the good old US of A--too many lawyers! You can roll down the windows and open the sunroof with the remote, but to close them, you need to insert the key and turn.

On UK models if you hold down the lock button any window thats down will automatically close. Even my 97 528i did it.

Still wish I lived in the USA and had to put the key in! MMM takeout jalopeno poppers, Denny's clam chowder on a Friday AND PROPER Teriakki beef jerky

In europe if you have the BMW alarm installed the windows can open/close pressing for a while the remote button.
If you don't have the alarm i think it only open, not possible to close.
It was like that on a E46 that i had.

NOT TRUE. In Europe all cars can close/open window by remote while holding the lock/unlock button !!!!!

I don?t know about the E60 but i can assure you that my E46 without alarm was like that.
The others BMW's that i use have BMW alarm and they open/close (525d E39;320d E46;730d E65;530d E60) but the 316Ti E46 didn't work like that.

My BMW E60 European works, my Audi A4 used to work like that too.
