Several recommendations:
-It's a long way from Valencia to Bilbao- I would go from Valencia to Barcelona (straight up the coast- there is a toll highway) and then north west to Bilbao.
- Neither Malaga nor Almeria are the places to visit in Southern Spain (Seville, Cordoba and Granada are must sees) When going to Almeria try to make a detour and visit Granada.
- Drive defensively- there can be aggressive drivers around
