can you use the voice command to control non-nav functions such as sound system (tuning different stations) and HVAC? Also can you use the navigation while the car is in motion? I am seriously considering leasing a 545 and any information would be helpful. Thanks.

Voice command controls many, many functions, such as selecting CD and/or CD track, radio station, etc. It's a great system. You can use nav when the car's in motion, although it does distract from driving!
Here's a doc with a long list of voice commands--although I haven't tried most of them.

Yes. You can use it while in motion and you can use voice commands too.
With the newest software you can even switch radio stations while in the nav screen/map display and the map stays on the screen, just the station changes. Or you can select a CD and a track and you don't automatically get the entertainment screen, which is nice, since you don't need to go back to the map afterwards.

If you have satellite radio, can you tune satellite stations using voice command?

I don't think so.
Although, I just got version 18.1 and I can now turn on the SAT radio by voice command... where I could not do it before.

I can do a lot of that with the steering wheel button program, too, right now until I get the new software.

Since CIP 14.0 I can not circle through all entertainment options anymore.
But since voice command is better working now, I really don't care anymore.
