I don't know if this helps, as I have a 535d, so many things are not the same as in your engine.
At any rate, my readout is 40 C for the white zone in the rev counter to start moving, 75 C for the white zone getting down to minimum (4 segments in a 535d), and between 87 and 92 C for a fully warmed up engine (it will fluctuate a bit depending on whether you are coasting or accelerating, engine speed, outside temp etc.). This is consistent with the main thermostat on my E39 (535i) which was marked 88 C, and most other cars I have seen seem to sit around 90 C, but I have no idea if specs are very different for current I6 petrol engines.
