When using the phone in the car via BT how do I mute the mic to spare the other party from the traffic noise around?

You can't be serious! Even my ?30 cheap BT headset has a mute function. Then again that same cheap headset can also allow me to use the voice tags stored on my phone.

I would think that you would have to use the mute button of your Cell phone, I have not seen any control function on my E60 that would mute the call. If you windows and roof are closed during a call, the person on the other line should not hear very much traffic noise.
