You can buy the material (3m) at craigslist. PM me, my friends and I did it to our interiors and we can certainly do it for you as well.

What size sheet(s) needed to wrap the typical interior wood pieces including door handles, rear ash tray cover, and piece that surrounds the seat heat buttons?

Just type "carbon vinyl wrap" on craigslist. There's many people in socal selling those.
I would say 30" x 60" should be more than enough.
