If your going to wineries...do yourselves a favor and hit TOLOSA VINEYARDS in SLO, TALLEY VINEYARDS in Arroyo Grande (amazing twisties back there), DOMAINE ALFRED, KYNSI WINERY and EDNA VALLEY VINEYARDS. IMHO and experience, SoCal ain't the place for good merlots and cabs. Napa, Sonoma and Paso Robles make the best cabs. (My wine fridge is stocked mainly with California cabs.) That said, a wine tour through the Santa Inez Valley (remember the movie "Sideways"?) is always fun, and not too far off the 101 Freeway, near Solvang. Expect to taste pinots, cab francs (not sauvignons), and dessert wines.
Be sure to have a designated E60 driver (or take a limo tour), though...
