I ate live sea urchin out of their actual shells last week. They wre cracked in half and served on ice. The spikes were cut down. Not only was it filled with "Uni", but I had to fish through the bodily insides floating throughout, to get to it. It was truly awesome. They were filled with the body juice and sea water. I squeezed lots of fresh lemon juice, grabbed a spoon and had a feast. I ate 6 of them. Yum! I took pix with my bberry and will post them soon.
i think i just threw up in my mouth a little bit

Does it taste even fishier because of the sea water?

i did that at redondo beach, they broke the top open, clean the inside out, and i spooned the uni from the sides. The spikes were still moving as i was eating it, people at the pier were so freaked out and amazed...

yep. however, these guys didn't clean out the inside. i had to fish through the cavity to get to the good stuff. i love it. too bad it's so high in cholesterol or i would eat a million of them a day. hahahaha!

Yes, but that's why you use fresh lemon juice. it counters the salt.
