My favorites are:
  1. Uni - I prefer Japanese Sea Urchin, as it's much sweeter in taste compared to California Uni. Japanese Sea Urchin is also tiny. It looks like a cat's tongue.
  2. Engawa - Fluke Fin (It's technically the muscle that controls the fin on the Halibut)
  3. Aji - Horse mackerel
  4. Syori - Needle Nose Fish
  5. Kimedai - A Pink Fish
  6. Kohada - Gizzard shad
  7. Ankimo - Monkfish Liver
  8. Hotate - Live Scallop
  9. Live Lobster - Tail meat is served live, while the upper portion of the body is still alive and watching you. It's like if someone served you up on a platter and was eating your legs as you were watching them, still alive of course. Yeah, it's cruel, but it tastes AMAZING!

I still enjoy my varieties of Tuna (Blue Fin, Big Eye, Chu-Toro, O-Toro, etc.), but I truly enjoy the rare fish that high end Japanese restaurants serve.

I've also had real tiger blowfish, also known as Fugu. It's similiar in taste and texture between Ika (Squid) and Hirame (Fluke). It's cut extremely thin and served with Ponzu sauce. My wife claims that it gave her a tingly sensation in her body, but I didn't feel that. However, I was about 4 Sapporo's and 2 Sake's in when I tried it, so I was pretty trashed. Hahahahaha!

Depends on the sushi bar and chef I think, I'm pretty sure we all have our favorite bar and chef....here's mine

1) Japanese Makarel
2) Uni (yes sea urchin-Japanese preferred)
3) Salmon
4) Unagi
5) Albacore
6) Spicy Crab Meat Tempura Roll
7) Honey Walnut Shrimp Roll
8) Spicy Scallop Roll
9) Lobster Roll
10) Stinking Roll (California Roll, but glazed with garlic butter on the outside)



1-5 are almost always ordered, 5-10 are ordered occasionally (try not to order rolls to much)

***My favorite sushi bar: My wife and I frequent Sushi Hirosuke in Encino. Once and awhile we make it out to Matsuhisu in LA.
