I'm looking for a camera with lens that are about the price range of $1000 to play around with. I want to be able to take HDR photos photograph, maybe shoot videos too and fish photography. I got saltwater fish tanks. I've tried the search feature but it was too much reading to go through.

Professional cameras do only one thing - they either take pictures, or shoot video. Not both. That is what consumer cameras are for. Second, you will not find a professional camera/camcorder for $1000.
If you are looking for a mid-grade pro-sumer camera, look into DSLRs, such as Canon and Nikon (EOS400 and D40/D40x are very good starter cameras and very affordable, certainly in your price range with maybe a pair of starter lenses). If you need a camcorder, look into 1080p HD cams, they are the best you can get on the market right now
