I have had my M5 for about a month now so I will chime in a bit. I have the M Multifunctional seats and absolutely love them. I could not imagine a more comfortable / sporty seat than these.
As for the other options, this is what I would suggest:
Must Haves:
1. HUD
2. Did I say HUD?
3. Full Leather ( I know it is expensive but it is damn nice)
4. Sirius Radio
5. Powered rear sun shade (especially if you have kids)
Waist of Money:
1. Comfort access
As for the the color, I have seen IB in person and it is a bit too loud for me. I agree on the Imola Red idea, that is a great color.
Oh and by the way, the car is an absolute rocket.
