Vinyl Shadowline
Get the real shadowline trims. You'll be much happier with the end result. Granted that some people have great success with tapes, but the odds are against you. So I'd go with the sure thing. Why waste your hard earned money and time, really? Just my thought.

I admit, I did end up ordering the actual shadowline retrofit, but for the roof I would first try with the vinyl. Painting the roof seems to permanent for me. Although it is a bigger area, it is basically a flat rectangle. There was a thread posted here not too long ago where somebody laid the sheet down, peeled back half of the sheet, stuck the vinyl on, worked on the first half, then peeled back the other half and it looked pretty good.

I like the idea of vinyl-ing your roof, but I did see a car whose roof was vinyl'd three years ago, and today, there are heavy signs of wear (scratches, nics, fading). I dont know if its from the quality of vinyl, but its just something to keep in mind if you're really picky about that sort of thing.
True, I guess more bird crap needs to be scrubbed off the roof than on the window trim

plastidip is awesome for some things...small chrome bits...our 5's dont really have those. but for the shadowline trim, you're going to get a finish thats similar to the dark grey plastic trim you find on most SUV's. It is also textured, so it feels grainy. It does have its perks, like being removable, but its hardly appropriate for the shadowline application.

Hm interesting. Did you happen to see the roof BEFORE it was vinyled? In essence the vinyl wrap is like a clear bra so there should not be scratches, knicks, and fading unless they were already there to begin with. That could very well be a reason why the roof was vinyled to begin with.
