You're just hydraulically driving the pistons in the calipers. It's the same amount of squeeze, just spread over a larger surface and into a larger rotor... Which isn't a bad thing.

Big brakes don't really make you stop faster because they're big, most stock factory brake systems are capable of locking up the wheels. Big brakes come in handy when it comes to repeated stops and improved modulation. Big rotors and calipers can hold and dissipate more heat energy, which means they stay cooler than smaller brakes doing the same amount of work. Cooler means less chance of fade and malfunction.

What I would be worried about on the e60 is screwing up all the active systems that try to keep bad drivers from killing themselves. Locked up wheels don't stop a car, so when the computer detects that the wheels are about the lock it takes steps to modulate the brakes so that the wheels are just on the threshold of locking (but still spinning). If you install big new brakes you run a very good chance of confusing that software, and creating a situation where the car doesn't brake very well when you stick the pedal to the floor.

If you'r not tracking the car you're not going to get much for you money. The difference in pads is probably all you're going to notice.

That being said, if Stoptech makes an e60 kit I would suggest using them. I really enjoy the features and feel of the kit compared to Brembo, and their markedly better than Baer and Wilwood.
