I had these wheels too. I had Falken FK452 tyres on the back which help avoid rubbing, so even with a lowered car I didn't hear anything. The ronts was another story. I had to get the front arches rolled and the plastic bit that sticks out where the inner front wing meets the front bumper cut away (its only small but sticks out and touches the tyre. Then it was all rub free:-)

I think your rear shocks need to be replace. I had your setup before and never experienced rubbing.(even with 3 people and some luggage)

Looking at the rear setup of your wheels, it seems that the tire design is a bit squarish for a 275, it almost kinda look like a 285, that's why it rubs. What tires are those?

At ET17 and 275 tires, you shouldn't rub at all even if you slammed the rear.

I got 19x9.5" rear at et20, and I added 10mm spacers to make them ET10. And I'm lowered on coils with 1 finger gap. I never rub.
