Ok here is the situation.

I have decided to move forward and purchased m6 miro reps (20x9 and 20x10) - Thanks Michael at Acute Performance!!

What suspension upgrade would suit me best??
-i have a 2006 530i (non sport)
-i do live in nebraska and do not want to slam my car to the ground

Would i be better off going with full set of coilovers or just getting springs?

Coilovers if you want the best ride and something that lasts. Don't do just springs.

And what wheel offsets did you go with?

As DrLev99 said, avoid just spring (especially you live in Nebraska ) if you could.
The cost of coilovers set maybe double (some maybe triple) the cost of a good set of shocks+springs combo.
Most of the coilovers set its highest setting maybe still lower than lowering spring even tho not slam to the ground.

GL!

+1 ... not a bad idea ...

Here in Nebraska they neglect to fix the potholes & remove 'ole railroad track then they just use that as a speed bump

Maybe in omaha but in south lincoln roads are perfect. Im not worried about replacing rims or anything.
