A lot of people use ET33 with spacers on non-XI to give a more aggressive (read rims coming almost to the edge of the fender) offset.

BMW did not actually make ET33 for the E60 XI models. I think they were for older model 3/5 series and current 3 series. Which is how they got popular with replica rim makers. MIROs are not OEM and the correct offset for E60 XIs is ET43 I believe.

Offset determines where the center of the wheel is. If you go with a lower offset (like ET20 in XI cars) than what your car should go with, your wheel will be coming out of the car, like http://www.f30driver...Car-TMS-099.jpg
That will impact driving etc, but mostly the car will look crap . For large size wheels, it can also cause rubbing.
