where does the water from the AC go?

I think the water is being "collected" by the underbody cover/panel. It has holes in it and will allow the water to drain if it get s too full. In fact...now that I think about it...I just removed that front underbody panel a few days ago, and remember a small bit of water being there...and I had been running the AC.

It could be a clogged drain somewhere, and/or the water could be draining somewhere that it shouldn't. When you begin to smell, see or feel this "misplaced" water definitley is not the time to START looking into it.
