When I go through the manual I see that some wheels are not possible for the e61. example the 172.
Why is this ?

They are possible and I know many people running them. The only thing is that BMW factory categorically denies to fit the wider rears from the factory to the touring. The reason for that is pretty much beyond me, but the dealers willingly put staggered wheel setups on the touring variants, too, without any implications on warranty or whatsoever.
Wider rears on tourings also have German TUV approval, so safety and ability will not be compromised.

The tourings might have differnt offsets. The rears wheels ET32 for the E60 might not fit the rear E61?

but I doubt it I'm sure they'll fit fine.
