Not sure why you are surprised. You went out in snow and ice with summer tires. BMW's own catalog says that summer tires should not be used in snow and ice.

I have RTF winter tires and the car was great this morning coming to work. I won every drag race at lights turning green againt the SUVs.
Also, I decided against the RFT's. Blizzak makes a RFT snow tire, but I decided against it. I have a doughnut in my trunk that came with car and feel that's sufficient.

all the tires were covered in a layer of snow. There was no visible tread anywhere on the tire.
The snow is gripped by the tread, turning the tyre into a slick.
Winter/snow tyres do not do this, the tread design ensures that the snow drops out so every time the wheel comes around frsh tread is available to grip the snow.
They are not perfect, but they work a whole lot better than summer tyres.

I have had the Dunlop M3 winter RFT's for both my E60 and E61.
Would not attempt to drive in conditions with snow accumulating on the ground without snow tires. With the winter grips, handling is great.

Winter/snow tyres do not do this..
I understood them to be different.
Or is that just marketing?
I'm sure our Nordic members can enlighten us...

There are wintertyers for Scandinavian wheather, see Continental or Nokian.

No wider than 225/50 17" for real winter conditions.

There are different types, winter/cold weather tyres also work better in snow, they are the type used in most of Europe and US. eg. M3, Conti-winter contact. These go up to V ratings for high speed use, also marked M+S
There are more aggresive tyres of this type for Nordic conditions, Conti viking contact to name but one. which give even better snow grip, but trade off dry grip and noise a bit more, especially when the temps rise. These mostly come in lower speed ratings some Q rated.

245 width winter tyres are missing the point. The wider the tyre the worse it will perform on snow. I have RFT Dunlop Wintersport M3's in 225 V rated and on fresh snow they are still quite slippery.
