when i was looking for a 550i, it had to be jet black. jet black color is more deep. saphire black looks like a dusty black to me.
jet black is also a lot easier to touch-up, and match the paint, if paint work is ever required.

I vote for Sapphire. Much better then plain Black or Carbon which is prone to scratching.

As far as I'm concerned, I would never own any BMW that wasn't Jet Black with black interior. However, there is no question that is hot, and a lot of trouble to keep clean. BUT...nothing looks as good when it's all shined up. Also, someone made a good point about touch-ups....much easier on a non-metallic color.
