However the beauty of having this Advanced AC is the Rest function, you can still enjoy the warmth for a while having the engine switched off. I love that.

I agree with what you said. I love the rest function also.

Everything is manual for me.
But another thing, isn't cold air pretty dried already. Why do you need it to be drier?
The humidity level in HK currently is around 80% and I don't have the A/C on and I am just fine.

Always on - the demist effect is very effective.
But if your preference is off, strongly recommend run it at least every two weeks as the a/c fluid is also its lubricant. It can be very expensive if the seals dry out.

Mine never smells -- maybe because I never turn it off?

Let me correct a couple of misunderstandings:
First, you don't need to turn off the snowflake, because
a) As already mentioned, the car monitors the humidity of the air to make sure it doesn't dry too much
b) Below 2 Celsius the compressor is switched off automatically by the car.
Secondly, the Auto Re-circ does not get rid of (most) smells - it detects pollutant levels such as CO and NOx and switches on then.

I'm not sure where I read this, but it might be in the manual.
The auto resirc function should not be on constantly. I think it had something to do with a filter or sensor which becomes saturated with water and other compounds.
I've also noticed that with the resirc on the initial boost of dew on the front window is higher.
On my previous 330 I also noticed that a cloud of dew would always collect on the front window if I had the resirc funtion running for a longer period of time.
As I understand the resirc function has littel effect during a normal traffic (traffic jam).
I put it on when driving through long tunnels, on ferries or in big enclosed parking houses.
