Sounds like a great car you've built there.....I agree with the others, Sport Auto trans with paddle shifters, and the biggest no-brainer for Texas, the Ventilated seats! 
I suspect you knew that though as you were considering them in the first place, (I hear the devil Summers in Texas!). Most importantly, enjoy the European delivery and take MANY pictures to post here when you are done!!

My Ride: 2011, X6 Hybrid . Alpine White , every option. 20" Conti' NON runflats,OEM trunk spoiler , LUX V3 AE's , HP Thunder Fogs , custom front bumper reflector delete........
The MSport package is a must !!!

My Ride: 2008 535i - Carbon Metallic Black, Black Nasca Leather, Dark Bamboo Trim. Sport auto step w/ paddles, M Sport package (M aero package, M steering wheel, M sport suspension, anthracite roof liner, 18" M135 wheels), Premium package (comfort seats, heated F/R ventilated F seats, Logic 7, PDC.
+1 for M Sport, Sport Auto with paddles, and ventilated seats! I live in Canada (brr....) and I still find them useful! Definitely need them in TX.

My Ride: My 5 and I met on Father's Day 2008 and have been together ever since. 20" Wheels (Make TBD), premium package, sport package, AiB V3 upgrade and a Passport Escort 8500 Radar Detector.

Thanks for all the replies! I'm going to seriously look at the M Sport Package. I was just concerned about the anthracite (sp?) liner - didn't want too much black in the car - not sure if I would like that. But I'll be looking into it.
The Ipod/USB adapter is automatic now - with the Value Package (an extension of the Premium Package). I'm also going to look more closely at the other suggestions. Thanks!

Good config - If I were in a toasty climate I would spring for the vented seats. And the "Value Pkg" , for those who mentioned IPOD, includes leather and IPOD.
