Yes, highway trips at 80 I'd get about 28-29 mpg in my 530 and about 27-28 in the 645.
IMHO, the 645 could use some taller legs in 6th gear. I understand the 545 has taller gearing in 6th. You are a little bit too far "into the candy" in 6th gear when high speed cruising in the 645ci.
When doing 80+, the engine is revving a little too high than it needs to IMHO. Good for performance, but bad for economy. The 4.4l V8 has enough grunt around 2000 rpm that it should be geared for 2000rpm at 80mph, not 2400 or so.
My Vette gets 33 mpg highway at 80mph. 80 mph is right at 2000 rpm with the manual trans. Actually it gets30+ all the way up to past 100 mph.

Welcome to the forum. I just returned from a 700 mile round trip, almost all freeway. OBC put mileage at 29.5. When I filled my tank and did the math, I got 22.5 miles per gallon. The OBC had my average speed at 78.3 - I am pretty sure that was right.
