Quick question, took my 08 535i for my first night ride last night and didn't notice the high dimming automatically. Should they?

Head lights
Im not high yet, but I did read somewhere that the headlights do dim when on auto and approach a vehicle with lights on

I'm sorry, I guess our cars had a high beam assistant option.
Use https://www.mdecoder.com/ to check options and look for 'SA5AC High beam assist'
