Burning / Playing MP3 CDs

So, two questions:
First would be.. What program/methods/etc have you guys had the best luck with when burning MP3 CDs to play in your front CD player?
I haven't tried too many, but I have noticed that different applications burning at different speeds have given me different performance out of the car's CD player. It seems to favor some disks over the others. (some read fast, some it'll spend a good while seeking to the next track)
I would also like the MP3 ID3 tags to show up properly on the list if possible... they seem to only show up after I start playing a song though. It's weird, and haven't fully figured it out yet.
Next would be: How does shuffle mode work on the car's stereo? If I select a song from the list, and choose "Random All", then that seems to work, but only after the song finishes playing... I think. If I use the next/previous arrows on the steering wheel, it actually plays the next or previous song on the list, not a random one.
I have a '07 525xi - standard audio, nav, no CD-changer in the glovebox.
