The 255/30's would be 26" tall and 775 rev/mile (1.2% difference)
The 285/30 would be 26.7" tall and 754 rev/mile (3.9% difference from stock and 2.7% difference from the 255/30)
I would assume using this size tires would freak out the traction control. In my E36 anything above 1% would freak the traction control out. I would bet that it would be no different in the E60. The tires are so different in size that the car thinks it is loosing traction.
I would recommend to get the correct size tires if you want your car to drive right.
245/30R20 Front and 295/25R20 Rear is what you should be running.
Here is a nifty little tool to use.
