My Ride: 08 550 Carbon Sport Almost everything factory, but no sound upgrades.
Mine is the Carbon with natural interior. Very pleased with it and its not to bad when needing a cleaning. Look hard at the bamboo trim.
But, those Alpine White E60s are great looking. That would be THE decision on my next one [if and when].

There is another color that's not in the BMW configurator, its Platimum Bronze. I came from a silver gray car. I now have PB, natural brown and light poplar wood. Looks great and much different than my previous cars.

Jeff,
I just went through the same dilemma. I ordered carbon black with natural brown, light poplar wood, and the anthracite headliner. Since you are doing a two year lease, the residualized cost of the anthracite is only roughly $150 or so - imo worth it! The nice thing about the natural brown, is that the carpet, lower dash, and center console is black, so it is much less suseptable to dirt, and, in my opinion, a sharper look. Both the dark poplar and light poplar look good with the natural brown, but the light poplar is as close a match as two natural materials can be. The contrasting natural brown and black door panels look great too. This whole combo goes great with the carbon black exterior, and a bonus is it will be unique, you wont see many of them. If you prefer the look of the bamboo, it works also. I saw the natural brown with bamboo at a dealer, and it looked ok. My only issue with it was it didnt tie the seat color to the rest of the car, instead it added an additional design element that wasnt coordinated.

Thank you for your reply. Do you find the carbon black to be as big a PIA to keep looking good as regular black??

I just went through a similar dilema, considering White / Greys / Blacks / Blues... My final choice was for Carbon Black, because I like the deep-blue tones in it. The Greys look fine and are easier to keep looking clean, but they just don't give me the same WOW-effect as the Carbon Black -- even with a layer of dirt.
As for the interior, I did not want another totally black interior and Natural Brown provides a great compromise between a light interior, but not as difficult to clean as other options (such as beige). What really appealed to me however, was the fact that only the seats and door elements are in this colour -- it really provides a great contrast even within the cabin, not just the outside of the car.
My first choice for Trim was Individual Piano Black, however the 900,- extra seemed a little heavy for me. I went for the free "Black High-Gloss" option instead. The Bambo trim was my other option, but wanted to have a solid colour and no brown (even if it is only under certain light conditions).
One thing I have always found, the first combination I come up with is typically also the one I go for in the end -- it was last time and again this time round!
Hope that helps -- if you're anything like me, you will change your mind a thousand times before ordered... and probably another thousand afterwards! Good luck with it all...
