Applying wax with your bare hands is the best way to prevent scratches -- it gives you a better feel for grit, etc.

One hires another to do so, when one pays that much for wax.

It probably has much to do with getting the wax heated to a state where it can be applied. I think P21S and Pinnacle are about 30% carnauba, and these say 60 and 70%. They must be very difficult to apply correctly, with concentrations that high.
