Polishing after a painjob?

My car's getting a paint job (hood and front/rear bumper). So I was talking to the guy that owns the shop today, and told him that the car has had an extensive detailing done recently (like 2 weeks ago) and that I will probably have to re-wax the freshly painted parts, to which he told me that I'd also most likely want to polish them as well.
This kind of surprised me as I naively thought that fresh paint shouldn't have any defects and should be in a "brand new" state, but apparently that's not the case?
So it does make sense to polish them before waxing?

Paint shops usually quickly polish the painted surface to get rid of paint dust and possible particles. But they do this so quickly and poorly that you will probably see swirling on the painted surface when you pick it up.

I see, I guess that's what the guy meant when he said the paint can never be 100% clean and will need polishing. So I should look out for swirls then, hmm.
