Just took care of this yesterday/today on my wife's '06. It was a real pain in the ass getting all of the old sticky tape off. Goo gone and WD-40 both didn't really help that much - the thing that did far more than anything else was using a hair dryer to heat up the glue and rolling it off (with a toothpick or thin stick like a shish kabob stick in tight areas).
The advice earlier in the thread to put the new seal in place before peeling off the backing is absolute gold.

I also did this last weekend on my wife's 07. I must have got lucky and it literally peeled off leaving no glue/residue. I pulled very slowly and at about a 45 degree angle. I also did it with the outside temp at around 50 degrees, maybe that had something to do with it peeling off so well. I had one small spot (less than 1/2 inch) that left a sticky residue and it took 15 minutes to clean.
I also agree with the earlier post in that doing the install with the roof closed fully seating the seal first, and then peeling back the tape worked perfectly.
New seal made a huge difference in wind noise...

I know this thread is super old but wanted to thank the Op and all for the great info, its solved a major headache for me and I had to join to say thanks.
I had the dreaded flood in the trunk, lost my TPMS controller before i discovered the water ingress.
After replacing the seal there is no wind noise at speed and should hopefully now limit how much water and other junk is coming into the pano roof area for the drains to handle. I cleared the drains before i did the seal using compressed air, the right rear tube was full of nasty dirt and grime no wonder it was flooding.
Thanks all this was a huge help, definitely one of the best DIYs for the E61 owner
